About the Chef
The Villa Roma Resort, located in the Sullivan Catskills of New York State, is honored to welcome our brand new Executive Chef, Jose Rivas, to our upstairs main dining room. Having started his culinary education locally at Sullivan County Community College he fits right in here at the Villa Roma. Changes are already being seen as he restructures the kitchen. Born in El Salvador he came to the United States when he was just six, his family helped him into the field, and as he grew older he became more and more passionate about the kitchen. He started paying attention to the chefs at The Raleigh Hotel where he started as a dishwasher, and became impressed and inspired by their ability to create meals with such passion and strived to do the same. He climbed the ladder at The Raleigh Hotel and soon took on his first position as Executive Chef in 2004. From there, he traveled to Las Vegas with his wife to work at the Flamingo Resort as a Sous Chef. Coming back to New York State he started a family and had three lovely children. Jose currently resides with his family locally in Monticello. He continued his passion at places such as The Nevele Grand Hotel, Camp Echo, Hudson Valley Resort, and Honor’s Haven, all located in New York. He loves creating so much that if he weren’t involved with food he would use his skills of precision to become a carpenter and build houses. Though he loves the kitchen his advice to people that aspire to be a chef would be, be cautious. The kitchen has become his life, and he gives it everything he has, one must learn to balance their life when you work in the kitchen. He believes that every dish that leaves his kitchen should look as though it was made for your own personal wedding day.
Nate Lukaszonas will be starting as Executive Sous Chef. Born and raised in Rochester NY, Nate has traveled to all ends of the U.S. from Monterey, California, St. Pete Beach, Florida, and Scottsdale, Arizona where he attended and graduated from Scottsdale Culinary Institute. He follows Chefs like Daniel Humm, Grant Achatz, and Thomas Keller which help him expand his techniques within the kitchen. He has used this knowledge to teach cooking classes and share what he has become fluent within his past twenty years in the industry. Being a chef, he has very high-end taste buds and enjoys meals like pork pho and crispy squid from one of his favorite Vietnamese restaurants, Sea, in Rochester, New York. Nate’s favorite protein to work with is duck; making things like pan-seared duck breast or duck jus, but also enjoys making things such as white bean ragout, carrot ginger purée, and grilled asparagus. In his free time, Nate enjoys playing golf, watching college hockey, and participating in American Culinary Federation events. He is looking forward to being a part of the Villa Roma team and relocating to the Catskills.
With summer just around the corner, The Villa Roma Resort will be buzzing as always. As a guest of the hotel or just as a local resident in the area, we welcome you to visit and try our new taste at all of our food outlets, from our poolside grill to our up class main dining room. Enjoy.
